Pork Chop with Onion Confit

I was inspired by one of Laura Calder‘s dishes, so I cooked this up for my family on the occasion of Belated Mother’s Day 🙂

Unfortunately, mom wasn’t exactly that impressed with the dish 😦 Oh well, I’ll stick to Asian cuisine next time.

(OK, so I slightly overcooked the pork…)
